Brian Cavil
General Manager
Brian Cavil has worked professionally in hospitality for more than twenty-five years. A native Texan and born to a family of educators, Brian ultimately chose a different path. He holds a Bachelor of Science degree in Dietetics and Food Service Management from Prairie View A&M University, but driven by a natural passion for people and guest relations, he found his true calling in restaurant management.
Brian deeply values genuine guest engagement, providing a level of polite, gracious hospitality that reflects his warm and giving spirit. Whether he is welcoming first-time guests or catching up with the many regulars he lovingly calls his "Palm Family," Brian takes great pride in nurturing relationships and building lasting bonds, a testament to his dedicated tenure with The Palm.
Kelsey Coughlan
Kelsey Coughlan, Senior Sales & Events Manager for The Palm Chicago has been a member of The Palm family since 2018. She brings over 15 years of hospitality experience to her role. Throughout her career, she has been dedicated to providing exceptional guest experiences and helping clients create memorable events of all sizes.
Her favorite part of event planning is being a part of her guests’ special moments and turning their visions into lasting memories. She thrives in the fast-paced energy of New York City and enjoys the excitement and unique opportunities that come with planning events in one of the world's most dynamic destinations. Her passion for hospitality, attention to detail, and commitment to service ensure that every event is executed seamlessly from start to finish.
Marc Simon
Executive Chef
Marc Simon joined The Palm family in 2005, and what began as a job quickly became a lifelong career. Starting as a porter, he advanced through the ranks through hard work, dedication, and the mentorship of talented chefs and leaders, ultimately earning the role of Executive Chef. Along the way, he gained experience at several iconic Palm locations, including The Palm Too, The Palm Tribeca, and The Palm New York Midtown.
Today, Marc is proud to lead the kitchen while carrying forward the traditions of quality and hospitality that define The Palm. Grateful for the friendships, opportunities, and lessons he has gained throughout his journey, he credits The Palm with helping him build both a successful career and a strong foundation for his family as a single father.
