Chef Brian “Coop” Cooper brings over 30 years culinary experience to his role as Executive Chef at The Palm Atlantic City, where he has spent the last four years leading the kitchen. Today, he commands the line to deliver steakhouse excellence and high-end hospitality guests expect every single night.
Chef Coop began his journey in Miami, developing his foundation at The Chart House and Prezzo before sharpening his fine-dining skills at Norman’s. He went on to launch major hotspots like South Beach Brasserie and Pearl, and later collaborated with celebrity chef Todd English at Bonfire in Boston.
For the past 18 years, Chef Coop has been a cornerstone of the Atlantic City dining scene. He has successfully directed premier, high-volume kitchens across the city, including Cuba Libre, Wolfgang Puck’s, and P.F. Chang’s. His extensive hospitality background ensures that every guest at The Palm experiences unparalleled steakhouse execution.
