A Piece of Manhattan History in East Hampton
The Palm at the Huntting Inn, located in picturesque East Hampton, New York was the sixth Palm to open after the original restaurant opened in 1926. The Huntting Inn is a beautiful Country Inn situated right on East Hampton's famous Main Street. The Palm has been located in the 300 year old building since 1980 and has been an East Hampton tradition ever since.

Tomas was introduced to The Palm in 1977, when he met Bruce Bozzi in Sarasota, Florida. One year later he opened The Palm Restaurant in Houston as a waiter where he worked for three years. In 1981, Tomas relocated to East Hampton, New York to be the General Manager of the newly opened Palm at the Huntting Inn. For the first five years, Tomas worked the summers in the Hamptons and the winters between Miami and Palm One and Too in New York City. With the increased popularity of the Hamptons, the East Hampton Palm was opened on a year-round basis. While making The Palm a fixture in the Hamptons he has also created a niche in Palm history. Tomas has worked at the Palm for more than 30 years and is still, enjoying every single day.

Lee Felty, General Manager
Growing up in a family of talented cooks and an appreciation for fine dining, it is no surprise that Lee would find himself one day managing a Palm. As a child, Lee was always allowed to order what he wanted from the menu when dining with his family. In fact, a menu was the first thing Lee was able to read as a child! After studying at Monmouth University and then transferring to The American Music and Dramatic Academy, Lee’s career started to veer towards the New York Stage. However, NYC was an expensive place to live, so he had to work while going to auditions. Determined to build on his previous restaurant experience and love of people, he decided he wanted to work with the best in the industry. Knowing that restaurants and theater are actually quite similar, he knew his performance training would come in handy. His first job in New York City was working as an assistant manager at the Russian Tea Room, where he was soon promoted, and with that it was back to his love affair with food. When the Russian Tea Room closed in 2002, Lee was drafted to another New York City landmark of the same ownership, Tavern on the Green. After a few years at the Tavern on the Green, Lee received an offer to work in Las Vegas at the world famous The Eiffel Tower restaurant in the Paris Hotel working for award-winning chef Jean Joho. It was here that Lee received intense training in both French service and cuisine, as well as meeting the needs of the most sophisticated tastes. After a short time at the Eiffel Tower, Lee developed new positions and departments within the restaurant to enhance its already fabulous guest experience. Just as he began to settle down in Las Vegas, he received a call from a former colleague in New York offering the assistant general manager’s position at the original Palm. Knowing the Palm’s reputation, Lee packed his bags and never looked back. After a short time he was given the opportunity to open the new Palm in Tribeca, as well as the Palm Bar & Grille in JFK Airport. After a few years with the Palm, Lee was presented with the opportunity to work with the legendary Tomas Romano, of the Palm in East Hampton. Tomas soon became a mentor and taught Lee even more about the Palm than he ever knew existed. Working with Tomas prepared Lee for his promotion to General Manager of the Palm in East Hampton. This position is full of challenges and opportunities afforded to very few people. Lee is very grateful to Bruce and Wally and the rest of the Palm family for entrusting him with their crown jewel!
