Joseph Profeta, General Manager
Joseph "Joey" Profeta, The General Manager of The Charlotte Palm, has the unique blend of expert culinary, hospitality and management skills. He started his career with the Palm in 1995 as a sous chef in Philadelphia. Joey added to his skills spending a summer as a sous chef at The James Lane Cafe, a restaurant in the historic inn in East Hampton. In 1997 Joey moved to The Denver Palm and was then promoted to Executive Chef in 1999. In 2004, Joey took the jump from the back of the house to the front of the house to showcase his hospitality skills as the Assistant General Manager of The Denver Palm. Quickly showing his prowess for all things Palm he was promoted to his current position as the General Manager of The Charlotte Palm. Since arriving in the Queen City, Joey and his wife Libby have fallen for the charm of Charlotte and are quite happy in their new home. Joey is a 1995 graduate of the Culinary Institute of America in Hyde Park, NY where he graduated with an A.O.S. degree in culinary arts. Mr. Profeta is currently a member of the American Culinary Federation, a certified Sous Chef and is also "Serve-Safe" Certified through the National Restaurant Association. Other accomplishments include becoming and Eagle Scout and serving as a company-wide trainer of all new Sous Chefs and Executive Chefs for The Palm.

Colin Johnson, Executive Chef
Since joining The Palm in 2002, Chef Colin Johnson has proven that hard work and dedication pay off by consistently progressing within the company. In 2007, Chef Colin took a big step toward fulfilling one of his lifelong dreams when he was promoted from Sous Chef to Executive Chef. Not only does he pour his heart and soul into every Palm dish, but he has also become a friendly and welcoming face to guests. When he’s not working, Colin enjoys spending time with his wife Amy and their two beautiful children.

Tonia Heidal, Sales Manager
When Tonia Heidal joined the Charlotte Palm as an Assistant Manager in 2004, she brought along with her a decade of restaurant and management experience. From day one, Tonia focused her time on ensuring guests had the best possible experience. Her hard work and dedication did not go unnoticed. Shortly after she started, Tonia was promoted to Assistant General Manager. In 2016, she made the transition to Catering Sales Manager, further expanding her restaurant experience. Tonia is a skilled planner who oversees every detail of party and event planning while maintaining peace of mind for our guests.

Carlee Jones, Assistant Manager
Carlee Jones is a native Charlottean with a long history in the service and hospitality industry. During her three years at the Palm, Carlee has shown her passion for guest service, hospitality and networking all the while progressing from a Hostess to an Assistant Manager. Carlee’s contagious energy and friendly nature make her a natural leader in building relationships with the guests and their families – a part of what she enjoys most about working at the Palm. During her time away from the restaurant, Carlee enjoys outdoor activities, hunting, working out and traveling. She also loves spending time with her family, especially her parents, sister, and nephew.

Will Farquharson, Assistant Manager and Sommelier
Will Farquharson is the Assistant Manager and Sommelier at The Palm Charlotte. He began his hospitality career working in banquets for the Hilton while attending school at East Carolina. After graduating, he moved to Colorado where he earned his Certified Sommelier Certification through the Court of Master while working at the Broadmoor Hotel and Resort. After returning to his hometown with his family, Will oversees all aspects of the beverage program at The Palm Charlotte. He enjoys sharing his knowledge of unique wines with customers in hopes that they will enjoy experiencing something new.
